3 Super Healthy Breakfast Ideas
Hi I’m Rachel, a wedding photographer and lifestyle blogger and this is my first feature as a writer here on the gorgeous BLOVED. You can usually find me contributing my images as a photographer (here) but this year I decided I wanted to contribute as a writer too, my subject being health, fitness & wellness, which is something I love to write about over on my own blog, This Life and Me.
I’m definitely no expert by all means but since meeting my partner Rich, who is a personal trainer, health and fitness has become a big part of my life and although I do tend to fall off the wagon more often than I’d like, I try my best to look after myself through eating well and exercising as much as I can. I also suffer with Crohn’s disease so my health is my top priority these days. I love both the idea of treating my body like a temple; eating well and working out, but also I’m a massive foodie at heart who can’t resist the smell of sweet pastries and warm milky lattes. I love anything to do with the outdoors; long walks with my dog, running in the late evening sunshine, getting out on my bike and most of all alfresco dining. What better way to kick start my features than with some yummy breakfast inspiration!
Breakfast is my absolute favourite meal of the day and also one of the most important because it sets me up for the day ahead. I tend to make sure it’s well thought out the night before so that I have the time to prepare it in the morning before I head off to work. I enjoy those moments during my morning routine where the house is sleepy, the only sound coming from my snoozing English bull terrier and the soft hum of the central heating. I cherish this part of the day more than any other. I like the stillness of the mornings and the clearness in my head before I’ve had time to mentally go through my never ending to do list.
Unless you’ve been hiding under a rock for the last 6 months you will probably be all over the avocado hype too so there’s no surprise two of the breakfasts I am sharing today are avocado recipes! I know I’m probably expected to say I wake every morning to a warm, lemon infused water but alas, I am a coffee lover through and through and I cannot cope without my milky sweet instant coffee!
I do tend to try to stick to less carby breakfasts if I can as eating fats and protein first thing is great for mental clarity and energy levels and also keeps me fuller a lot longer. I live with a cereal addict but it is extremely rare I will ever have a bowl of cereal for breakfast because the sugar content is sky high, even in the ‘low fat’ ones. I do eat porridge and blueberries some mornings though and if I feel like having a ‘cheat’ breakfast I will always opt for wholemeal toast and marmalade! It is my go to comfort breakfast.
So without further ado, here are 3 super healthy and simple breakfast ideas.
Eggs Baked in Avocado
First up, eggs baked in avocado. Can you believe that Rich surprised me by bringing me this in bed one morning a few months ago? I was absolutely shocked when I saw it and wondered where he got the idea! He actually stole it from my Lean in15 book by Joe Wicks and not only did it taste amazing but it also looked so Pinterest worthy! He definitely gained some brownie points with this impressive breakfast idea.
To make, all you have to do is cut the avocado in half, take out the stone and also a tiny bit of the flesh and crack an egg into each half. You then blast it in the microwave for 30-second intervals until the egg is cooked to your liking. You can also had some bacon strips too for even more protein goodness!
Protein Power Smoothie
For Christmas Rich got me a Nutribullet, which I really wanted so that I could start having smoothies on the mornings where I’m running late, or I’m lacking inspiration. The idea of the smoothies is to try to incorporate veg as well as fruit otherwise you will end up drinking mainly sugar for breakfast and that is never a good thing!
For this smoothie I pack the bottom of the Nurtribullet with spinach then add some plain or vanilla protein powder, a banana, some blueberries and some unsweetened almond milk. I don’t measure anything I just wing it and hope for the best! This smoothie is quite sweet and you can’t taste the spinach at all so don’t be put off by it. It is a nice change to regular breakfasts with it being so quick and easy and has the added bonus of being able to take with me to work.
Avocado on Toast
I know, I know, I’m a little obsessed with the avocado but this breakfast is a classic and is good for those of you who prefer to have some carbs first thing in the morning. I mash my avocado with some salt and pepper, some lemon juice and a sprinkle of chilli flakes to give it a bit of a kick then spread it over gluten free or seeded wholemeal bread. This has become one of my absolute favourite breakfasts and sometimes I even have it as a little snack mid afternoon after I workout. There are lots of options with this recipe too so why not try crumbling some feta cheese on top or some cherry tomatoes or maybe add some smoked salmon for variety.
