Pancake day is surely one of the best days of the year… who doesn’t love an excuse to gorge on all things stodgy covered in all things sweet?!  Of course it’s the last day to indulge for anyone planning to abstain during Lent too, so it’s a great reason to go all out! We all have our favourite toppings (bacon & syrup for me please!) but I bet you’ve never strayed far from the traditional pan-size treats you made as a kid?  Whether you’re planning an all-out feast at home or something a little more elaborate with friends, I’ve found some of the best deliciously different Pancake Day ideas on Pinterest.

American-style pancakes are my go-to weekend brunch treat, layered with maple-cured bacon and covered in sticky maple syrup.  Sometimes I’ll throw in a handful of blueberries for an added hit of Vitamin C!  Try my tried-and-tested American Pancake recipe.  This year I’m tempted to try these banana pancakes as a healthier alternative, they certainly look yummy layered with bacon, banana and homemade apple syrup on Modern Wife Style!  On the other end of the scale, this fresh berry and ricotta pancake stack would make a super indulgent dessert!

When I lived in Holland I loved picking up a paper packet of Dutch poffertjes (fluffy mini-pancakes) from the local street sellers, dosed liberally in butter and powdered sugar!  Traditionally these use a special cast iron or copper pan, but you can easily recreate these bite-sized beauties at home using this easy poffertje recipe.

For the more adventurous, create pancake stacks layering mini pancakes with fresh berries and powdered sugar.

Super thin and sweet, crepes are the grown-up version of the traditional British pancake and make a great desert for more elegant gatherings.  They make a pretty centrepiece when stacked up on the table surrounded by a delicious array of sugary toppings (think fresh berries, banana, chocolate sauce and cream).  They even make an impressive pancake ‘cake’ when layered with fresh berries and cream – perfect for a Shrove Tuesday wedding perhaps?!  I love this quick and easy crêpe recipe.

Let’s face it, pancakes are already pretty fun!  And sometimes the best way to let kids get involved is to chuck a selection of toppings on the table alongside a warm stack of pancakes and let them get stuck in!  For those who like a little less mess thought, why not try creating some fun pancake faces with your littlies? We love these bear pancakes – such cute little ears!  Or why not make pancake pops, coat in chocolate sauce (nutella craving anyone?!) and dip in funetti and sprinkles f- perfect for a pancake day party!
