The Festive Issue: Gingerbread Cookie Jar Christmas Gift

Christmas in the Karenanna household entails lots of baking (of course!) but we also love spending time together making gifts and treats to share. This cute gingerbread cookie gift jar is the perfect treat for young and old and everyone in-between. These wonderfully spiced and ridiculously moorish cookies can be given as festive wedding favours or Christmas gifts – or used to hang on the tree as we do at home! We used a fun moose cutter to give a twist on the humble gingerbread man. These are fun to bake of course but the real fun is in the decorating, anything goes here! I love them simply with royal icing but my children have other ideas about the ones going on our tree this year – although they don’t last long here!
To create this gorgeous gift, simply layer the dry ingredients into a pretty glass jar. Add ribbon and gift tag with the method attached.
350g Plain flour
100g Soft brown sugar
1 tablespoon ground ginger
1 teaspoon mixed spice
1 teaspoon baking soda
125 Softened butter
3 tablespoons golden syrup
1 egg yolk
Simply beat 125 soft butter with 3 tablespoons of golden syrup and one egg yolk, mix until creamy and smooth. Then add the contents of the jar and mix until soft dough forms. Knead into a ball, wrap and chill for 20 minutes. Pre-heat oven to 170C. Roll out dough to 5mm thick and cut out shapes using cookie cutters. Transfer to baking trays and cook for 10-15 minutes until golden and set. Ice and decorate when cold.
